Gravy Lovers Meatballs

  • 10 Yukon Gold Potatoes
  • 1 Yellow Onion
  • 6 cloves Garlic
  • 2 heads Broccoli
  • 2 pounds Ground Beef
  • 1/2 cup Panko Breadcrumbs
  • 2 tbsp Beef Stock Concentrate
  • 2 tbsp Sour cream
  • 4 tsp Vegetable Oil
  • 6 tbsp Butter
  • 2 tbsp Flour


  • Preheat oven to 450 degrees.
  • Wash and dry all produce.  Medium dice the potatoes into 1/2 inch cubes. 
  • Halve, peel, and finely chop onion.  Peel and finely chop 2 cloves of garlic.  Peel and wrap 4 cloves of garlic in a small piece of foil.
  • Cut broccoli florets off the stalk, discard stalk.  Cut florets into bite-sized pieces.
  • In a medium bowl, gently combine beef, panko, chopped garlic, 6 tablespoons of onion, 1 teaspoon of salt, and plenty of pepper.  Form into 1-inch balls. 
  • Place the meatballs and garlic foil packet on one side of a baking sheet.  Place broccoli on the opposite side and toss with a large drizzle of oil and a pinch of salt and pepper.  Bake until meatballs are cooked through, broccoli is browned and tender and garlic are very soft.  About 15 minutes.
  • Place potatoes in a medium pot with a pinch of salt and enough water to cover by 2 inches.  Bring to a boil and cook until tender, about 10 minutes.  Drain thoroughly and return to pot.  Cover until ready to mash.
  • Meanwhile, melt 2 tablespoons of butter in a large pan over medium heat.  Add remaining onion and a pinch of salt and pepper.  Cook, stirring until browned and softened.  8-10 minutes. 
  • Add flour.  Cook, stirring until lightly browned, about 1 minute.  Gradually stir in 1 1/2 cups of water until fully incorporated.  Stir in stock concentrate and simmer until thickened, about 1 minute.  Season with salt and pepper.  Reduce heat to low.
  • Place roasted garlic onto a cutting board and mash with a fork.  Add to pot with drained potatoes along with sour cream and 4 tablespoons of butter.  Mash, adding splashes of milk until you reach desired consistency.  Season with salt and pepper. 
  • Add meatballs to the pan with gravy.  Stir to coat.  If the gravy has become to thick loosen with splashes of water.  Divide the mashed potatoes and roasted broccoli between plates.  Top with meatballs and gravy.
