It’s Fall! Which means it’s also football season and tailgating season! One thing I love to do is cook some yummy food and entertain during the game. BBQ is the most obvious choice for tailgating and game day recipes and our favorite brand is Stubbs. Check out these awesome recipes for your next game day party.
Stubbs is full of flavor and makes an amazing choice for any BBQ recipes you have. They not only have BBQ sauce they also have some great spice rubs to use on any meat you might be preparing for game day. We put together a list of 4 of our favorite tailgating recipes for you, hope you enjoy.
Beer Can Chicken:
1 3-4lb whole roasting chicken
6 tablespoons Stubb’s Bar-B-Q Spice Rub
1 can of beer
1 beer can chicken holder (optional)
Prepare your grill for indirect hot heat cooking at 350°.
Open the beer and pour about 1/3 of it into a glass. Put 3 tablespoons Stubb’s Bar-B-Q Spice Rub into the beer can.
Rinse chicken thoroughly and pat dry. With the remaining spice rub, season the inside and out of the chicken, making sure to get between the skin and the breast meat for extra flavor.
Place the beer can into the beer can chicken holder and then slide the chicken cavity over the beer can. Cook the chicken at 350° for 1 1/2 to 2 hours or until it reaches an internal temperature of 180° (you can also prepare in an oven at the same temperature).
Let the chicken rest for five minutes before removing from the holder and carving.
NOTE: Beer can chicken holders can be found with the grilling accessories at most major retailers. If you choose to prepare without a chicken holder, slide the chicken directly over the beer can, but take caution when balancing it on the grill, as it will more prone to tipping over.
Stubbs Smoky Roasted Garlic Hummus:
3 whole cloves garlic, peeled
1/4 cup olive oil plus 1 tablespoon, divided
1 can chickpeas (garbanzo beans)
1/4 cup tahini (sesame seed paste), optional
1 teaspoon Stubb’s Hickory or Mesquite Liquid smoke (or more or less to taste)
1 teaspoon Stubb’s Bar-B-Q Spice Rub (or your favorite Stubb’s Rub; or add to taste)
A few tablespoons water, as needed
Lemon juice to taste
Salt and pepper to taste
Olive oil for drizzling
Stubb’s Bar-B-Q Spice Rub
Chopped fresh cilantro and/or parsley
Preheat oven to 350° degrees. Place the garlic and 1 tablespoon of olive oil in some tin foil and make a pouch with it. Place this foil pouch in the oven and roast for about 30 minutes or until the garlic cloves are soft and slightly browned.
Drain and rinse the chickpeas and put them in the bowl of a food processor. Add in the tahini, roasted garlic, liquid smoke, and rub, and pulse a few times to chop up the chickpeas. Remove the lid, scrape the sides down with a spoon or rubber spatula, and turn the machine back on. While the motor is running, drizzle in the 1/4 cup of olive oil. Remove the lid and scrape down the sides again, then add in water as needed with the motor running to smooth out the hummus to your desired consistency. Add in some fresh lemon juice and a large pinch each of salt and pepper. Blend again and season with more lemon juice, salt, pepper, liquid smoke, or rub to taste.
Serve immediately, drizzled with a little olive oil and dusted with the rub you used, or place in a resealable container and refrigerate until ready for use. Keep in the refrigerator for up to one week.
Stubb’s BBQ Chicken Kabob:
2 lbs. boneless, skinless chicken breasts cut into 1” pieces
2 1/2 tablespoons Stubb’s Bar-B-Q Rub
2 red bell peppers, cut into large chunks
1 cup Stubb’s Original Bar-B-Q Sauce
8 each wooden skewers (soak in water for 1-2 hours)
In a large bowl, toss the chicken and Bar-B-Q Rub together. Cover with plastic wrap and let it rest in the fridge for 30 min to 1 hour.
Alternate pieces of chicken and red bell pepper on the skewers.
Grill over direct heat for 7-8 minutes or until chicken is cooked through. Turn every 2 to 2 ½ minutes to prevent burning.
Baste with Stubb’s Original Bar-B-Q Sauce and use a covered grill to ensure a smoky flavor.
Stubb’s Cowboy Queso Dip:
1 cup Stubb’s Original Bar-B-Q Sauce
1 15 oz. can black beans, drained
1 32 oz. package Velveeta, cubed
1 cup freshly prepared guacamole
In a large microwave safe bowl, combine Velveeta, Original Bar-B-Q Sauce, and black beans. Microwave on high for two minutes then stir. Microwave for an additional two minutes and stir. Repeat until cheese is fully melted.
In the center of a serving bowl, spoon 1 cup of guacamole. Top with 2 cups of the cheese mixture. Serve with tortilla chips.
