My Nutrisystem Journey:
I had an awesome week this past week on Nutrisystem. I love when I have weeks that I stay focused, I follow my diet plan every day, and I meet my exercise goals. Nothing makes me feel happier or more proud then when I have an amazing week, meet all my goals, and it shows on the scale. Having that feeling makes sticking to the plan a little easier, you just feel like you are on top of the world.
This week is my birthday and then the next week is Valentine’s Day so I have two holidays that I usually celebrate with sweets coming up. I have been on a mission this week to come up with some yummy substitutions that I could use in place of my usual birthday cake and chocolates. I am in love with the Nutrisystem cakes, they are so good. So I thought they would be a great item to dress up and make a dessert to celebrate this week.
I really want to enjoy my birthday and Valentine’s Day but I don’t want to blow all my hard work. I think it’s important to allow yourself a few treats here and there but you can do it in a smart way. So this week I am sharing my recipes for how I took the Nutrisystem golden pound cake and Nutrisystem chocolate cake and turned them into yummy jar desserts.
So I love chocolate and strawberries. Those are two of my favorite sweet items so when I decided to make these desserts I wanted to go with two of my favorite flavors. I make a chocolate mousse jar cake and strawberry shortcake jar cake to share. These are really easy to make but they taste amazing! The Nutrisystem cakes are great on their own but if you want something a little more special for a big celebration these are a great idea. Plus this gives me an excuse to enjoy my new kitchen and rustic kitchen lighting.
Chocolate Mousse Jar Cake:
For my birthday I wanted something chocolate. So I took the Nutrisystem chocolate cake and turned it into a mousse jar cake. It’s really yummy and a great way to dress up the chocolate cake. I wouldn’t do this every day but it’s great for a celebration or day you want something special.
You will need;
1 box of sugar-free chocolate pudding
3 cups of milk
Sugar-free whip cream
Start by cutting up your chocolate cake into small pieces I did mine into twelve pieces.
Prepare the pudding as directed on the box. You will need three cups of milk for this as well. Once you get it mixed together let it set up in the fridge until you reach the consistency you like.
Now we are going to layer the different items into a small mason jar, I used the preserves size jars.
First, put down a layer of cake, I did about three pieces per layer. Then a layer of chocolate pudding, I did about a 1/8 to a 1/4 of a cup. Then a layer of whip cream, I used approximately two tablespoons. Repeat the layers one more time. If you want you can crumble some chocolate cake on the top of the last whip cream layer.
It’s super yummy and a great way treat for chocolate lovers. I really enjoyed mine on my birthday. I was able to use three pieces of cake on the two layers and make two of these desserts with one Nutrisystem cake.
Counts as: 1/2 Nutrisystem Snack, 1 Smartcarb, 1 Other (not certified by Nutrisystem, these are what I counted it as)
Strawberry Shortcake Jar Cake:
One of my favorite desserts is strawberry shortcake so for Valentine’s Day I plan to enjoy these yummy strawberry shortcakes made from Nutrisystem golden pound cake. Super easy to make and they are amazing!
You will need:
Fresh Strawberries ( or you could use frozen too)
Sugar-Free cool whip
You will start by cutting your pound cake into pieces. I did 12 small pieces so I could make two desserts out of it. If you want to make one jar dessert with one cake you could do larger pieces and cut them into six pieces instead.
You will also need to cut up your strawberries. Make sure to wash them first. I cut mine at an angle down on each side to make them look like hearts and then sliced them. I cut up four strawberries (one strawberry for each layer in my desserts).
Now you are ready to do your layers.
I started with a layer of cake, I put three pieces for each layer. Then a layer of whip cream, I did approximately two tablespoons. Then your layer of strawberries, I did one strawberry per layer but if you really like strawberries you could do more. Finally, I put some strawberries on the top sticking up since they look like hearts, thought it looked really cute.
These were the best! I love them and plan to make them again in the summer when strawberries are more in season, the ones I got in February were not as sweet as I like them. So if you can’t find strawberries this time of year you might try frozen. I still loved it though, one of my favorites.
Counts as: 1/2 Nutrisystem snack (unless you used the entire cake in one jar then 1 snack), 1 other, 1 Smartcarb (not certified by Nutrisystem, these are what I counted it as).
