My Nutrisystem Journey:
It’s fall Y’all and there are pumpkins everywhere! I don’t know about you guys but I have been struggling this week with seeing all the fun holiday inspired recipes around. I’m not sure why but the holidays seem to be all about food for our family so it’s going to be really hard going into my first holiday season on Nutrisystem. I have been working hard all week to prep by finding some Nutrisystem-friendly recipes. Luckily I found a bunch on the Leaf and I’m going to share them with you!
But first, let’s discuss my week. I love to keep you guys updated on my weekly progress. This has been a pretty good week for me. A little slower on the weight loss but that seems to happen about once a month for me. I am on track to reach my quarter goal though and on track to reach my goal for Christmas so I am ok with a slower week. What are your goals for the holidays? I plan to be at 150 pounds lost by Christmas. I have been losing about 10-15 pounds a month so I should be able to get there.
Not only have I been losing weight, I have noticed a big shift in my energy level. I have started feeling a lot better and it’s made it a lot easier to get up and move more. I am making a commitment to do more. I have noticed how lazy I have become. At my size, I relied heavily on my kids and husband to do everything for me. So I am making an effort to do things myself. I even ventured out to Walmart twice this week! Seems silly to be excited about that but I have avoided leaving the house for about two years so it’s a big accomplishment for me. I’m hoping that by taking the extra step to get out more I’ll be more active and improve my health. It’s about more than the scale for me.
Tips & Tricks:
I love pumpkin and I have really been bummed to be missing out on all the Pumpkin recipes this fall so I went on the search for some Nutrisystem-Friendly recipes. I found a bunch on the leaf (I love the leaf it is a great resource) and I wanted to share three of my favorites.
4-Ingredient Pumpkin Brownies
- ½ cup pumpkin puree
- ½ cup mashed banana
- 1/2 cup peanut butter
- 1/4- 2/3 cup cocoa powder (more cocoa yields a richer taste)
- Zero-calorie cooking spray
- Mix together all ingredients in food processor or blender until batter forms.
- Transfer brownie batter to 6×6 greased pan and bake for 12-15 minutes at 350 degrees.
- Let brownies cool before slicing.
Servings: Makes 6 brownies
On Nutrisystem, Count As: 1 brownie counts as 1 SmartCarb and 1 Powerfuel
Skinny Pumpkin Ice Cream
- 4 frozen medium bananas
- 1 cup pure pumpkin puree
- 1/3 cup sugar-free maple syrup
- 1 1/2 tsp. pumpkin spice
- Blend all ingredients in blender until smooth.
- Transfer ice cream to a freezer-safe container and freeze overnight.
Servings: Makes 6 servings
On Nutrisystem, Count As: 1 SmartCarb
Skinny Pumpkin Latte
- 1 cup nonfat milk
- 2 Tbsp. pumpkin puree
- ¼ tsp. pumpkin pie spice (cinnamon, nutmeg, allspice, ground cloves)
- 1 packet stevia
- 1/2 cup black coffee (optional)
- 1 Tbsp. nonfat whipped cream (Reddi-wip)
- Combine all the ingredients in a pot.
- Warm on Medium-High, stirring occasionally.
On Nutrisystem, Count As: 1 PowerFuel
