It’s not exactly taco Tuesday but if you are looking for something a little on the spicy side for dinner tonight these easy chicken fajitas are amazing. We have been working with EveryPlate this month and we have fallen in love with their delivery program. You can choose if you want enough for 2 or 4 people, which makes it really easy if you are cooking for only two. We are doing the family box of 4 though and it has made making dinner a cinch. Tonight we made easy chicken fajitas and we are going to share the recipe with you.
I will list the amount for 2 people first and 4 people second in parentheses.
Red Bell Peppers (1|2)
Red Onions (1|2)
Sour cream (2|4 Tablespoons)
Chicken Stir Fry Cut (1|2 pounds)
Southwest Spice (2|4 Tablespoons)
Flour Tortillas (6|12)
Start out by washing and drying the product. Halve, deseed, and thinly slice the bell pepper. Halve, peel, and thinly slice the onion. Zest 1/2 (or 1) teaspoon from the lime, quarter the lime.
Heat a drizzle of oil in a large pan over medium-high heat. Add bell peppers and cook, stirring, until slightly softened about 4 minutes. Add the onion and cook, stirring, until browned and softened, about 5 minutes more. Season with salt and pepper. Turn off heat, transfer to a plate and set aside.
While the veggies cook, combine sour cream, lime zest, a squeeze of lime juice, 1/2 (or 1) teaspoon of seasoning, and 1 (or 2) teaspoons of water in a small bowl. Season with salt and pepper, you can also add your favorite hot sauce for some extra kick.
Heat a large drizzle of oil in the pan used to cook veggies over high heat. Add chicken in a single layer. Sprinkle with remaining seasoning and season with salt and pepper. Cook, stirring occasionally until browned and cooked through about 5 minutes.
Meanwhile, wrap tortillas in a dampened paper towel and microwave until warm and pliable, about 30 seconds. Thinly slice the jalapeno, removing seeds if you prefer less heat.
Divide chicken and veggies among the tortillas. Drizzle with sour cream and top with jalapeno slices, if desired. Serve with any remaining lime wedges on the side.
I love this recipe. It was so simple and easy to follow along with and I love the ease of using EveryPlate. You have the perfect amount of every item and you have everything you need. Just pull it out of the box and you’re ready to cook. The only thing we had to add to this recipe was salt and pepper, oil, and water. Couldn’t have been easier.
