We do the four people box and it’s a great way for me to make something I’m proud to feed the kids after a busy day.
Tonight we made Dijon Butter Steak with herby potatoes and a green salad. I highly recommend the box subscription because it makes the process so easy but I did include the recipe as well so you can make it at home. I love to have the EveryPlate shipment because they send the exact amount of what you need so there is no waste and the portion sizes are perfect so we don’t have any leftovers to deal with. It’s really simplified my cooking process. Plus I don’t have to shop!

Yukon Gold Potatoes (5 | 10)
Rosemary (1 stem)
Shallot (1 | 1)
Lemon (1 | 1)
Dijon Mustard (2 | 4 tablespoons)
Ranch Steak (2 | 4)
Radishes (3 | 6)
Spring Salad Mix (1 | 2 bags)
Vegetable Oil (4 | 8 teaspoons)
Butter (3 | 6 tablespoons)
Olive Oil (2 | 4 tablespoons)
Preheat the oven to 450 degrees. Bring (3 | 6) tablespoons of butter to room temperature. Wash & dry all the produce. Medium dice potatoes into 1/2 inch cubes. Strip rosemary leaves off the stem, discard stem. Finely chop leaves until you have (1 | 2) tablespoons. Halve, peel, and finely chop shallot until you have (1 | 2) tablespoons. Halve the lemon.
Place potatoes on a baking sheet and toss with (1 | 2) tablespoons of oil, (1 | 2) teaspoons of chopped rosemary and a pinch of salt and pepper. Roast until browned and crispy, about 25 minutes.
While the potatoes roast, in a small bowl, combine softened butter, half the dijon, half the chopped shallot, remaining chopped rosemary, and a pinch of salt and pepper. Pat steak dry with paper towels and season all over with salt and pepper.
Heat a drizzle of oil in a large pan over medium-high heat. Sear steak until well-browned and cooked to desired doneness. 3-5 minutes per side. Top steak with half the Dijon butter. Transfer to a cutting board to let rest.
Meanwhile, thinly slice radishes. In a medium bowl, whisk together (2 | 4) tablespoons of olive oil, remaining chopped shallot, and a squeeze of lemon juice. Taste and season with salt and pepper. Just before serving, add spring mix and radishes to bowl with dressing and toss to evenly coat.
Thinly slice steak against the grain. Divide sliced steak, roasted potatoes, and salad between the plates. Top the steak with remaining Dijon butter.
Using EveryPlate makes it super easy but you can definitely do this at home on your own though which is why I wanted to share the recipe. It only took us about 30 minutes to put these together and kids loved them. A super easy meal in minutes. Perfect for a busy day after school functions.
